chocolate almond brookies

Rich and chocolaty, soft and nutty, part cookie-part brownie...Chocolate almond brookies!  This is a dessert fit for a celebration.  Or just an everyday-type dessert.  But definitely a celebration dessert today because this is forgivingmartha's 100th post!

Things have come a long way from the very beginning, and though it actually hasn't been that long, there have been so many changes.  All for the better, of course!
These "brookies" (brownie/cookies) are both vegan and gluten-free, but are far from boring and "healthy-tasting."  They're made with almond flour and sweetened with an all-natural sugar substitute called xylitol.  No eggs in these babies!  I decided to use coconut oil instead.  They also have chocolate chips inside, which add to the extra-chocolaty-goodness.
Chocolate Almond Brookies
vegan, gluten-free
1 1/2 cups almond flour
1/2 plus 1/8 cups coconut oil, melted
1 cup white rice flour
1/2 cup cocoa powder
1/2 cup xylitol
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoon vanilla extract
1 teaspoon almond extract
3/4 cup chocolate chips
extra almonds for decoration
  1. Preheat your oven to 350 degrees.  Line a baking sheet with parchment paper; Set aside.
  2. In a large bowl, add mix together dry ingredients until well-incorporated.
  3. Add vanilla extract, almond extract and coconut oil to dry ingredients and stir until well blended.  
  4. Add chocolate chips and combine.
  5. Form dough into tablespoon-sized balls and place on lined cookie sheet.
  6. Press an almond into each ball. 
  7. Bake at 350 degrees for about 20 minutes.
  8. Let them cool completely on a baking rack then transfer to an airtight container. Store in refrigerator.
And now for a life-update.  
For those of you who have asked, Bikram is wonderful.  Amazing.  I love it.  I typically go to class first thing in the morning and love starting my days that way.  I've even made some friends in my classes (Hi Kurt!) which I love.  It's challenging and exciting, yet calming and balancing.  As I've mentioned, I've never been the typical yoga-type.  I had attended one yoga class during college and was kindly asked to leave because I giggled too much.  Bikram is a different story.  It requires you to maintain such a focus that you don't even have to worry about taking yourself too seriously.  I'm still fumbling and clumsy, but the postures are beginning to resonate and I'm already beginning to see improvement.  I definitely already feel an improvement.

Oh my gosh, these look soooo amazing! Can't wait to feed them to my gluten-free friends. Skeeter gets my vote...she couldn't be cuter. :)
