It's dessert!

It's breakfast!

It's dessert for breakfast!
Today's going to be a good day.
How could it not be a good day when it starts with something like this?   You're right.  Impossible.
This is simple and so quick to throw together, yet it tastes far better than any breakfast prepared over the course of hours.   And?  It's healthy.  No added sugar, all natural ingredients, yet everything you need to start your day and keep you going.  And the star addition...

I'm in love with this stuff.  It's the stuff of gods.  I will, undoubtedly, be using this in future recipes.  Coconut oil and coconut butter are loaded with health benefits, which you can read more about here.  This is a raw coconut butter that includes the coconut oil and the coconut flesh and comes together in a smooth, creamy consistency.  To be quite honest, it tastes sinful.  Naughty.  I'm almost certain it can't be good for me when it tastes this good.

Coconut-Crusted Caramelized Banana
vegan, gluten-free
1 banana, sliced in half length-wise and then quartered
1 tablespoon coconut oil
2 tablespoons raw coconut butter
3 tablespoons shredded unsweetened coconut
1 pinch of sea salt

  1. Heat coconut oil in a skillet and add banana slices.  
  2. Let cook until slightly brown then add shredded coconut on the slices.
  3. Let brown on all sides.  
  4. Remove from skillet, add dollop of coconut butter and pinch of salt, then serve warm!
