s'mores pops

There's no need to look any further.  I found the one. Yes, this is the official treat of the summer. S'mores pops!

I know.  I'm aware it's not technically summer yet, this is just in preparation of the glorious season.

They're cute, they're portable, they're not messy.  And who doesn't love something on a stick?  Everything is better on a stick!

S'mores Pops
chocolate chips (I used milk)
lollipop sticks
graham crackers

  1. Set oven to broil.  Line a baking sheet with parchment paper.
  2. Place graham crackers on lined baking sheet and top each with as many marshmallows as you're able to fit.  Broil until marshmallows are browned.  
  3. Place a graham cracker on top of each to make a sandwich.  Add a lollipop stick to the middle of each marshmallow sandwich.  Let chill in the refrigerator until set. 
  4. Once hardened, dip each into melted chocolate and roll in graham cracker crumbs.  Place on wax paper and return to refrigerator.  Serve and enjoy!
You should probably munch on these alongside a s'mores milkshake.

memorial day milkshake

I had a great holiday weekend.  The weather couldn't have been more perfect for outdoor tomfoolery.  I spent all day Saturday with friends on a tree-top adventure in Pennsylvania, climbing, scaling and ziplining.

And Sunday?

Sunday I took a bike trip.  I have something new to cross off!  I completed number three on my list by taking a 15 mile bike trip to a nice park in a nearby town to picnic.
Sunny and hot. 
Found Tiny Tim on the side of the road. 
The bike trip left me sunburned and in need of a mushy-cushy bicycle seat.  Clearly, after one burns so many calories peddling for an extended period of time, a  calorie-filled milkshake was in order.
S'mores Milkshake
1 cup vanilla ice cream
1 cup milk (I used almond milk)
20 mini-marshmallows (plus extra for garnish)
1 teaspoon vanilla
2 graham crackers
pinch of salt
1/4 cup milk chocolate chips

  1. Set oven to broil.  Line a baking sheet with parchment paper. 
  2. Pour marshmallows on lined baking sheet and broil until tops are well-browned.
  3. Add ice cream, vanilla, salt and milk to mixer and blend until smooth.  Add toasted marshmallows and graham crackers to ice cream mixture and pulse until incorporated.  
  4. Pour into a glass, garnish with crumbled graham crackers and toasted marshmallows.
