keeping austin weird

I'm teetering between over-the-top-awesome and completely insane, thankyouverymuch.

After what seems like an eternity, I’ve finally made it.  I successfully transported myself and my life to a new, wonderful place and I’m so happy to be here.  In this adventure, I’ve been reminded of the value of good friends.  My dad commented that ‘good friends will help you move, but really great friends will help you move away.’  I feel blessed to have my life-long friends, Pete and Mikey in my life and definitely miss them already.  Mike says he’s scared of Texans, but I’m forcing him to come visit me soon.  My mom and dad were also monumental in my move.  If it weren’t for all their help, I would probably be hauling my couch tied to the top of my car and lost in Kansas right about now. 
In packing every. little. thing. I. own, I’ve come to the conclusion that I need to make a major change.  In short, I’ve made the decision to live life more simply.  I have an abundance of stuff.  I’ve had such a hard time of sticking to what I really need, rather than the things I want.   Does anyone else find it nearly impossible to walk out of Target with only what’s on your list? 
Because I’m still drowning in boxes and most everything is lost in some unknown nook of my new apartment, I’ve been eating quick and simple things.  In fact, Whole Food's has been my stomach's saving grace in these transitional times over the last two weeks.  Now that I have a kitchen again and in my quest to add raw kale to my repertoire, I threw together a quick salad with fresh strawberries, crunchy radishes and sweet mint.  I liked the addition of the mint leaves to the kale, as it balanced out the harsh bite kale typically has.  I dressed it simply with just lemon juice mixed with garlic salt.  

Strawberry-Radish Salad
vegan, gluten-free
a head of kale
handful radishes, thinly sliced
handful strawberries, sliced
handful mint, coarsely chopped
juice of a lemon
garlic salt, to taste
freshly ground pepper, to taste

Simply tear leafy kale off of stems into bite-sized pieces and add to a bowl.  Cover in lemon juice and add sliced radishes and strawberries and chopped mint.  Season with garlic salt and pepper to taste.
