cilantro-pepita dressing

Today you're going to have to take a leap of faith.  Just trust me.  Pretend this is a team-building exercise and just fall back.  I may or may not catch you, but what I will do is give you the best gift of dressing you've had in your life.  Here's the trust part...  I know it  will sound weird and look strange.  Just get over it.  Taste it and love it like I do.  You definitely won't be sorry.
This dressing was inspired by a dressing/sauce I had at Casa de Luz just down the street from me.  It's creamy and nutty and makes me want to eat salads for breakfast.  One thing that is (drastically different than baking and) amazing about cooking is that no one cares about measurements.  So, technically, this isn't a recipe, so there's no need to follow it to the very degree.  It's more of a guide as how to go about creating your new favorite dressing.
Cilantro-Pepita Dressing
vegan, gluten-free
1/2 cup raw pepitas (pumpkin seeds)
1/4 cup fresh cilantro
1/4 cup water
1 tablespoon olive oil
sea salt

Simply throw all ingredients in a blender, blend until smooth and serve on top of your salad, steamed greens or even sauteed veggies!
