Casa de Luz just down the street from me. It's creamy and nutty and makes me want to eat salads for breakfast. One thing that is (drastically different than baking and) amazing about cooking is that no one cares about measurements. So, technically, this isn't a recipe, so there's no need to follow it to the very degree. It's more of a guide as how to go about creating your new favorite dressing.
1/2 cup raw pepitas (pumpkin seeds)
1/4 cup fresh cilantro
1/4 cup water
1 tablespoon olive oil
Simply throw all ingredients in a blender, blend until smooth and serve on top of your salad, steamed greens or even sauteed veggies!
