raw brownies

July 27, 2011
If brownies are wrong, I just don't want to be right.  Some days (like today) require a dense, fudge-y brownie and these are just the ticket.  Why?  Because they're healthy brownies and they're just that- dense and fudge-y.  Umm...Sold!
While they don't taste remotely like anything healthy, they do have nutritional value, which makes this delicious treat just that more justifiable and enjoyable.
These brownies are pure gustatory bliss.  Only a few simple ingredients and zero baking equals instant gratification!  Oh, and we have a two-thumbs-up approval of plain-jane-eater Alanna.  So yes, these are man and kid approved!
Raw Walnut Brownies
vegan, gluten-free, raw
2 cups whole walnuts
1 1/2 cups Medjool dates, pitted
1 cup raw cacao
¼ tsp. sea salt
1 tablespoon raw agave
  1. Place walnuts in food processor and blend on high until the nuts are finely ground. Add the cacao and salt. Pulse to combine.
  2. Add the dates one at a time, blending well between each addition.
  3. Pour in agave and continue to pulse.
  4. Press into a lined cake pan or mold. Place in freezer of fridge until ready to serve. Store in an airtight container.
