I've had quite a whirlwind of a LONG weekend and it was pretty darn wonderful. I packed up and took a little road trip with my pooch to visit my parents and had a lovely stay. We had some exciting adventures and, it goes without saying, my tastebuds were in heaven the whole time. Somewhere between the oysters and the steampot, I decided that I'd be okay to not live another day. Life couldn't get much better. Alas, I made it back home and life did get better. I went to four grocery stores before noon yesterday.
I know. Don't even.
And hey! Even better...Guess what's going on this weekend! ForgivingMartha, ME, Jess! will be doing a cooking demo for Country Living Magazine's fair in Austin! I'll be on at 2 pm Saturday! I'll be preparing a gluten-free picnic and I'd love for you to join!
French rolls (I used Gillians, but Udi's and Trader Joes gf rolls are also delicious!)
roasted red peppers, thinly sliced
ripe avocado, sliced
salmon filet, skillet-cooked or grilled
salt and pepper to taste
juice of one lemon
- Simply spread hummus on halved French roll and assemble by adding red pepper, avocado and cooked salmon. Salt and pepper generously. Add sprouts on top. Squeeze fresh lemon over sprouts and serve!
