veggie pho

The best thing to come out of Vietnamese restaurants is Pho, no question.  I. love. it.

Bet you didn't know how easy-peasy it is to make!  True story.  There's nothing difficult about this veggie-filled soup.  I made it twice this week actually.  You can certainly add tofu, chicken, or whatever your little heart desires.

And may I just take this moment to ask... Where have you been all my life mister baby bok choy?
