fried green tomatoes

Fried green tomatoes.   Believe me when I tell you....this really, honestly, certainly is my new favorite food.   I would gobble a slice of fried green tomato right out of the palm of Satan's hand, if necessary.  

It all begins with the tomatoes.  Mine are straight from my beloved East Austin farm, Johnson's Backyard Garden.  Sliced and then dipped in egg with a little romp around in a flour-corn meal mixture and a final sizzle in a skillet... Now let us all bow our heads in thankfulness.  

This recipe uses three green tomatoes and you better have some friends prepared to help you eat them... or you better watch yo'self.  These little mouth-seducing-tomatoes disappear really easily.  

Fried Green Tomatoes

gluten-free, dairy-free

1 extra large egg
4 tablespoons almond milk
1 cup cornmeal
1 cup gluten-free all-purpose flour (I like Bob's Red Mill)
3 tablespoons vegetable oil
3 green tomatoes, sliced
  1. In a small bowl whisk together egg and almond milk.   In another small bowl, mix cornmeal and gluten-free flour.
  2. Heat oil in a large skillet over medium heat; use more or less oil to reach about 1/4 inch in depth.
  3. Dredge tomato slices first in egg mixture, then in cornmeal mixture. 
  4. Carefully place slices in hot oil and cook until browned on both sides.
