chocolate chunk oat bars

You wanna know a great way to start the day?  Coffee, duh.  But really great?  Spying your reflection in the mirror only to find that your hair looks exactly like this.  No joke, people.  I woke up this morning to Dog the Bounty Hunter hair on my head.  I have formally vowed to myself that all shame will be shoved aside next time and photo documentation will be shared should this magic moment reoccur.  

The cherry on top to my morning were these peanut butter chocolate chunk oat bars.  I used oat flour and old fashioned oats in place of any wheat flour...clearly enough reason to justify eating for breakfast without shame.   What more could you want for a Thursday morning?  Really. 

Salted Peanut Butter Chocolate Chunk Oat Bars

gluten-free, dairy-free

1 cup peanut butter
1/4 cup Earth Balance butter
3 large eggs
1 1/2 cup all-natural Swerve (or granulated sugar)
1 tablespoon vanilla
2 cups gluten-free oat flour
1 cup gluten-free old fashioned oats
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon sea salt
1 1/2 cups chocolate chunks
  1. Preheat oven to 350 degrees.  Line a 9"X11" baking pan with aluminum foil and coat with vegetable oil. 
  2. Cream together peanut butter and butter in the bowl of a stand mixer.  Add eggs, vanilla and then sugar.
  3. In a separate bowl, combine dry ingredients (oat flour, oats, baking soda and powder and salt).
  4. Add the dry mixture to the wet and mix until well combined.
  5. Fold in chocolate chunks.
  6. Transfer dough into prepared baking pan and pat with hands to distribute evenly.
  7. Bake for 15-20 minutes until lightly browned. Allow to cool for one minute before transferring to a cooling rack.  Cut and serve.
