Black Quinoa Saladvegan, gluten-free
1 cup uncooked black quinoa
1 1/2 cup water
1 zucchini, sliced
1 squash, sliced
1 red bell pepper, sliced
1 block of extra firm tofu, cubed
olive oil
white pepper
ginger
garlic powder
salt
Sweet & Tangy Sauce
- Cook quinoa according to provided directions. Drain and set aside.
- Pour 1 tablespoon of olive oil to a heated pan and add tofu and sliced veggies.
- Add spices to taste. I used a pinch of ginger (1/4 tsp), about 1/2 teaspoon white pepper and about 1/2 teaspoon of garlic powder. Let all sides brown.
- Once cooked, toss with quinoa. Add salt and sauce and serve!
