It's no secret that I'm quite a fan of peaches and with August flying right past me (and the end of summer looming over) I've been using my favorite summer fruit in any way possible.
You name it, I've done it. Well, maybe. That means if you know of a wonderfully, unique way to each a peach, let a sista' know!
These {vegan and gluten-free} spring rolls are light, quick and oh-so refreshing with sliced peaches, julienned cucumbers, shredded lettuce, chopped cashews and spicy herbs including mint, basil and cilantro.
