Therefore, we have the Pumpkonut Chai Shake. While the name is a bit obnoxious, the taste is anything but. It's simple, it's quick, it's healthy and most importantly, it tastes like a dream come true. My dream, anyway.
Speaking of dreams, I was able to use my brand-spankin'-new-birthday Vitamix Blender to whip up this baby. This little machine will absolutely hold a special place in my heart until I die. Surely someone out there gets as excited as I do about fancy-schmancy appliances. Anyone?
Pumpkonut Chai Shake
vegan, gluten-free
2 medium bananas, chopped and frozen
1/2 cup pureed pumkin
1/2-3/4 cup almond milk (soy, rice or heck, even regular milk is fine, too!)
1 teaspoon cinnamon
1/2 teaspoon pure vanilla extract
1 chai tea bag
3 tablespoons shredded coconut
(Let's see how complicated I can make these directions.)
1. Place all ingredients in blender.
2. Blend.
3. Serve in a Tervis tumbler*.
*I'm in love with this new tumbler I received as part of a Foodbuzz Tastemaker program with Tervis. This guy is virtually indestructible and won't crack, melt, shatter, or chip. Better than that, their double-wall insulation means hot drinks stay hot cold drinks stay cold, and my furniture is safe from those annoying condensation rings!
