What began as my favorite ice cream flavor has magically transformed into the blonde version of a brownie (also known as the blondie.) I've made chocolate chip blondies, but the addition of mint just might knock one's socks right off. If that weren't enough, I played extra naughty and added crushed Thin Mints on top. I'm a bad, bad girl.
So there you have it. Mint chocolate blondies Oops. There goes your diet.
It was a stupid diet anyhow. You look grrreat, my friend. And in other great news, I discovered my old LFO CD last night. Between that find and these blondies, the world is whole once again.
Mint Chocolate Blondies
2 sticks butter1 cup brown sugar
1/2 cup sugar
2 eggs
1 tablespoon vanilla
2 1/2 cups flour
1 tsp salt
1 tsp baking soda
16 ounce package dark chocolate + mint chips
1 sleeve Thin Mint cookies, crushed
- Preheat oven to 325 degrees F. Cream butter with sugars. Scrape down the sides of the bowl and beat in eggs and vanilla.
- Combine the dry ingredients and mix into the sugar mixture.
- Stir chocolate chips into the dough. Spread dough into a greased 9x13 pan and sprinkle crushed Thin Mints on top.
- Bake at 325 for 30 minutes or until golden brown and done. Let cool in pan 15 minutes before cutting.
