No need to throw away your diet resolutions...just yet, anyway. Today's sweet treat is... dare I say...healthy!
Some desserts I make for others because I like them. Other desserts I make because I'm a selfish, hungry and peanut-butter-craving gal. That's honesty right there.
Made with fabulous ingredients, these rice krispy treats are kicked up a few billion notches and will rival any rice krispy treat you've ever tasted. No, really. Sans butter, they're actually made with brown rice cereal and peanut butter and sweetened with natural maple syrup. I hereby give you permission to be selfish and make these for yourself, too. Or gosh-forbid, be all saint-like and share them.
Peanut Butter Rice Krispy Treats
vegan, gluten-free
5 cups (unsweetened) brown rice cereal, gluten-free
3/4 cup peanut butter
1/2 cup brown rice syrup
1/4 cup maple syrup
1 teaspoon salt
2 teaspoons arrowroot/tapioca starch
5 cups (unsweetened) brown rice cereal, gluten-free
3/4 cup peanut butter

1/4 cup maple syrup

2 teaspoons arrowroot/tapioca starch
- Line a 9x13" pan with parchment; Set aside.
- In a large pot, combine peanut butter, brown rice syrup, maple syrup, salt and starch.
- Heat over medium temperature and stir until small bubbles form.
- Stir in rice cereal and stir until evenly coated.
- Press into prepared pan and use a spatula to spread evenly and firmly compress into pan.
- Refrigerate for at least an hour before cutting and serving.

Sometimes I find rice krispy treats overwhelmingly sweet but these sound wonderful and I love the fact that they are not packed with butter and/or sugar!
