It's the most wonderful time of the year...
There's so much to be happy about! Ranking very high on this list is Peanut Butter Buckeyes. First off, there's certainly no better combination in the world than peanut butter and chocolate.
As a major peanut butter lover, they are one of Pete's favorite and they're fairly simple to boot!
Melt butter over medium heat in a small pan.
In a large mixing bowl, add peanut butter, powdered sugar, vanilla, and salt.
After butter becomes a light brown color, remove from stove and pour into the mixing bowl.
Mix together until a smooth dough forms.
Form into 1/2 - 3/4 inch balls. (I used a cookie scoop to keep my balls a uniform size.)
Put the balls in the freezer for at least half an hour to firm. Melt your chocolate using a double boiler. You can use a toothpick or a bamboo skewer to dip the balls into the chocolate.
Peanut Butter Buckeyes
2 sticks of butter
1 1/2 cups peanut butter (you'll want to use a smooth, regular version like Skippy or Jiff)
5 1/2 cups powdered sugar
1/4 tsp sea salt, more for sprinkling
1 tsp vanilla
4 cups chopped chocolate (I use high quality semi-sweet chocolate)

Whip together until a smooth dough forms. Form into 1/2 - 3/4 inch balls. Place peanut balls on a baking sheet covered with parchment paper. You should make 5-6 dozen balls. Sprinkle with sea salt. Freeze until firm. Meanwhile, melt your chocolate using a double boiler (making sure that the boiling water is not touching the bottom of the bowl). Using a toothpick or skewer, jab a single peanut butter ball and dip in the melted chocolate and place back on the cookie sheet.

I LOVE peanut butter balls!! I had never heard of them as buckeyes before. The recipe that I have calls for wax in the chocolate . . . which I have always omitted. I've always thought it didn't sound very healthy. Thanks for reminding me I need to make these.
